Gluten-Free Rice Stuffing Recipe

  • 1 small onion, chopped fine

  • 2 tablespoons fresh parsley leaves, minced
  • 2 teaspoons fresh thyme leaves, minced

Instructions

  1. Heat the chicken broth in a medium-sized saucepan until boiling.
  2. Add the rice, reduce the heat to low, and cover. Cook the rice for 40 to 45 minutes or until tender.
  3. Set the rice aside in a bowl.
  4. Heat the butter in a saute pan until melted.
  5. Add the onion, celery, pecans and fresh herbs.
  6. Saute on high heat until the onion is translucent.
  7. Pour the onion mixture over the rice and mix well.
  8. Stir in the cranberries.

Serving Suggestions
