Ingredients
- 2 cups water saved from boiled potatoes
- 1-1/2 cups white rice flour
- 1/2 teaspoon salt
- 3/4 cup sweet rice flour
- 1 tablespoon gelatin
- 1/2 cup potato starch flour
- 2 tablespoons sugar
- 1 tablespoon plus 1 teaspoon quick-rise yeast
- 1/2 cup potato flakes
- 1/2 cup dry milk powder
- 3 teaspoons xanthan gum
- 2 tablespoon olive oil
- 3 eggs, slightly beaten
Instructions
- Add 1/8 cup of the potato water with a pinch of sugar to the yeast.
- Set aside for 10 minutes until foamy.
- Combine the flours, salt, gelatin, potato flakes, xanthan gum and remaining sugar. Whisk well to combine.
- Combine the remaining ingredients in a separate bowl and whisk well.
- Slowly add the dry ingredients to the wet ingredients, mixing thoroughly.
- Add the yeast mixture to the dough.
- Pour the dough into a buttered bread pan and leave to rise in a warm spot for 30 to 35 minutes.
- Bake at 375 for 40 to 50 minutes or until golden brown on top.
- Allow to cool completely before turning out of the bread pan.
