Fruity No-Bake Banana Bars

Depending on your preference, any nut butter can be used in place of the peanut butter in this recipe.

Ingredients

  • 1 very ripe banana, peeled
  • 2 cups oat flakes or rolled oats
  • 1 cup peanut butter
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Coconut or olive oil (for greasing the pan)

Method

  1. Combine all of the ingredients in a food processor and pulse until you have a solid and cohesive ball. If you do not have a food processor, you can mix the ingredients together by hand with a wooden spoon.
  2. Coat an eight inch square baking pan with the oil. Alternatively, you can line the pan with wax or parchment paper.
  3. Pat the dough and use your hands to spread it evenly across the baking pan.
  4. Cover and place the pan in the freezer for 24 hours so that the bars can firm up and the flavors can meld together.
  5. Cut into 18 bars.
  6. Store in a tightly sealed container in the freezer where they will last for about two weeks.

Fruity Figgy Bars

Ingredients

  • 1 cup raisins
  • 1 cup dried figs
  • ¼ cup currants or dried cranberries
  • 1 cup oat flakes or rolled oats
  • ¼ cup olive oil or liquid coconut oil
  • ¼ cup cashew or almond butter
  • 4 Tablespoons honey
  • ½ teaspoon salt
  • 1 Tablespoon ground cinnamon

Method

  1. Remove any hard stems from the figs.
  2. Cover the raisins, figs, currants and oats with water and allow them to soak for 20-25 minutes.
  3. Combine all of the ingredients in a food processor and pulse until well mixed.
  4. Form the dough in squares, balls, or other shapes of your choice. The dough can also be rolled out and cut into fun kid-friendly shapes with cookie cutters.
  5. Place on a well-oiled or parchment-lined cooking sheet in the freezer for at least one hour to allow the bars to firm up.
  6. Store in a tightly-sealed container in the refrigerator or freezer where the bars will keep for up to three months.
