Gluten-Free Pie Crust Recipe

When learning how to make pie crust using gluten-free all purpose flour, you'll find a number of different recipes and techniques. This easy recipe uses warm water rather than cold. It makes one crust. If you plan on a two-crust pie, double the recipe.

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • ½ teaspoon salt
  • 1/3 cup gluten-free shortening
  • 2-3 tablespoons warm water

Instructions:

  1. Sift together dry ingredients.
  2. Cut in shortening with a pastry cutter or two knives.
  3. Add water to the mixture, a tablespoon at a time, until it reaches the right consistency. Dough should be wet but not sticky. When it can be formed into a ball without being crumbly (too dry) or sticky (too wet) it is ready.
  4. Wrap the ball of dough in plastic wrap and let it set at room temperature for about a half hour while you prepare the pie filling.
  5. After thirty minutes, dust your pastry mat or other rolling surface with gluten-free flour.
  6. Place the ball of dough in the center of the rolling surface to cover with a dusting of flour.
  7. Turn it over to do the same with the other side.
  8. Press down just a little and begin to roll out the dough using the rolling pin. Roll in different directions with gentle pressure to give the dough a round shape as it flattens. If the rolling pin begins to stick to the dough, dust the rolling pin with a little flour.
  9. When the pie crust is thin enough to be semi-transparent, it is ready to place into the pie dish.
  10. Lay crust into pie dish with enough excess at the edges to tuck under to create a fluted edge.
  11. Before adding the filling, poke a few fork holes into the bottom of the crust to avoid filling with air when baking.

If pre-baking the crust, fill with dry beans to help the crust keep its shape, and bake at 425 degrees for 20 minutes, then lower the temperature to 375 and bake for an additional 15 minutes. Allow to cool completely before adding your filling. Otherwise, follow the cooking temperature and time for the specific pie you are baking.
