Instructions
Place the coconut flour, baking soda, salt, cinnamon and brown sugar in a bowl and stir with a fork.
In a second bowl, beat the eggs, and add in the coconut milk, juice, vanilla and oil and stir to combine.
Pour the liquid mixture into the flour mixture and beat until well mixed.
Squeeze the water out of the zucchini with a paper towel and fluff gently with a fork.
Fold the zucchini into the batter.
Pour the batter into a greased 9-inch loaf pan and place the pan in an oven heated to 350 degrees.
Bake for 45 to 50 minutes.
Allow the bread to cool completely before removing from the pan.
