- 1 pound stew beef
- 1 large bunch kale
- 1/2 butternut squash, peeled and cubed
- 1 large yellow onion
- 3 tablespoons garlic, minced
- 1 teaspoon ground white pepper
- 1 teaspoon ground cumin
- 1 bunch fresh dill
- 1 bunch fresh rosemary
- 1 bay leaf
- 1 24-ounce container of gluten-free beef stock, like Pacific Natural Foods
Instructions
- Layer the ingredients into a slow cooker in the order shown. There is no need to brown the beef ahead of time, eliminating the need to flour it.
- Set the slow cooker to "low" setting.
- Allow the stew to cook for eight to ten hours.
Gluten-Free Meatloaf

While meatloaf traditionally relies on breadcrumbs to get its texture, it can also use other grains, like oatmeal to do the same thing.

Ingredients
- 1 pound ground beef
- 1/2 cup gluten-free quick cook oats
- 1 egg
- 1/2 cup mild cheddar cheese, shredded
- 1/4 cup olive oil
- 1/2 teaspoon ground pepper
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1 tablespoon garlic, minced
- 1 cup of fresh vegetables such as spinach or asparagus (optional)
Instructions
- In a large bowl, mix together the beef, oats, egg, cheese, oil and spices. Stir until very smooth.
- Grease the bottom of the baking pan and spoon on roughly half the mixture so that it covers the bottom of the pan evenly.
- Layer on some fresh vegetables if desired.
- Spoon the rest of the meatloaf mixture on top of the veggies.
- Bake for 40 minutes at 375 degrees until lightly browned on top.
Gluten-Free Taco Filling

Instructions
- Heat the oil in a large pan.
- Add the onion and saute over high heat until translucent.
- Add the beef and cook until fully browned.
- Stir in the tomato, horseradish, garlic, Worcestershire sauce, spices and salsa.
- Turn the heat to low and simmer for 20 minutes or until most of the liquid has evaporated.
- Serve with your favorite taco sides.
