  • 1 pound stew beef
  • 1 large bunch kale
  • 1/2 butternut squash, peeled and cubed

  • 1 bunch fresh dill
  • 1 bunch fresh rosemary
  • 1 bay leaf

Instructions

  1. Layer the ingredients into a slow cooker in the order shown. There is no need to brown the beef ahead of time, eliminating the need to flour it.
  2. Set the slow cooker to "low" setting.
  3. Allow the stew to cook for eight to ten hours.

Ingredients

  • 1 pound ground beef
  • 1/2 cup gluten-free quick cook oats
  • 1 egg
  • 1/2 cup mild cheddar cheese, shredded
  • 1/4 cup olive oil
  • 1/2 teaspoon ground pepper
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1 tablespoon garlic, minced
  • 1 cup of fresh vegetables such as spinach or asparagus (optional)

Instructions

  1. In a large bowl, mix together the beef, oats, egg, cheese, oil and spices. Stir until very smooth.
  2. Grease the bottom of the baking pan and spoon on roughly half the mixture so that it covers the bottom of the pan evenly.
  3. Layer on some fresh vegetables if desired.
  4. Spoon the rest of the meatloaf mixture on top of the veggies.
  5. Bake for 40 minutes at 375 degrees until lightly browned on top.

Gluten-Free Taco Filling

  • 1 pound ground beef
  • 1 tablespoon grape seed, or other high heat oil
  • 1 large yellow onion, diced

  • 1 tablespoon gluten-free Worcestershire sauce
  • 8 ounces fresh salsa
  • 1 teaspoon ground cumin

Instructions

  1. Heat the oil in a large pan.
  2. Add the onion and saute over high heat until translucent.
  3. Add the beef and cook until fully browned.
  4. Stir in the tomato, horseradish, garlic, Worcestershire sauce, spices and salsa.
  5. Turn the heat to low and simmer for 20 minutes or until most of the liquid has evaporated.
  6. Serve with your favorite taco sides.
